Quinoa with Kalamata Olives

Quinoa Pronounced “KEEN-wah” has a light fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked.

Actually a seed, quinoa is rich in amino acids (protein).  Not only is quinoa high in protein, but the protein it supplies is complete protein, meaning that it includes all nine essential amino acids. In addition to protein, quinoa features a host of other health-building nutrients. Because quinoa is a very good source of manganese as well as a good source of magnesium, iron, copper and phosphorus, quinoa may be especially valuable for persons with migraine headaches, diabetes and atherosclerosis.


1 Cup Quinoa (uncooked)

1/4 Cup Tastefully Simple Dried Tomato & Garlic Pesto Mix

1/4 Cup Pitted and Chopped Kalamata Olives

Fresh Herbs for Garnish (Basil, chives, parsley or oregano)

Cook 1 Cup of quinoa according to the package. Once most of the water has been absorbed, add the Dried Tomato & Garlic Pesto Mix and kalamarta olives.  Cover and let stand 3 – 5 minutes.  Garnish with fresh Serve as a main course or side dish.  EnJOY!


Simple Seafood Chowder

Recreate Tastefully Simple’s “Perfectly Potato Cheddar Soup Mix” into a delicious Seafood Chowder!

1 Tastefully Simple Perfectly Potato Cheddar Soup Mix
1 tsp. Seasoned Salt
1 tsp. Garlic Garlic
6 cups water
6.5 oz. can minced clams, drained
10 oz frozen corn, thawed
1/2 cup dry sherry
36 fresh shrimp, deveined and cut in half

Combine first 7 ingredients in a large saucepan.  Simmer 20-30 minutes. Add shrimp during the last 10 minutes, simmer until shrimp are heated through and pink.

Makes 4-6 servings.

This recipe is perfect for Super Bowl Sunday!

1 lb package frozen meatballs, thawed
28 oz can crushed tomatoes
1 cup water
About 2 Tbsp. Tastefully Simple Spinach & Herb Dip Mix
About 2 Tbsp. Tastefully Simple Onion Onion
4 oz (1 Cup) shredded mozzarella cheese

Spinach and Herb Dip Mix

Spinach & Herb Dip Mix

Combine first 5 ingredients in a greased slow cooker.  Cover, heat on low 2-3 hours or up to 8 hours.  Sprinkle cheese over top just before serving, replace cover and cook until cheese melts.

1 cup pecan halves

1/4 cup brown sugar

1 Tbsp olive oil

1 Tbsp balsamic vinegar

1 Tbsp Tastefully Simple Warm in the Oven Mulling Spice

Candied Pecans:
Prepare a large sheet of parchment paper or foil for cooling pecans.

Stir sugar, mulling spice, oil, and vinegar in a large skillet over medium heat until sugar melts and syrup bubbles, about 3 minutes. Mix in pecans and stir until nuts are toasted and syrup coats them evenly, 5-6 minutes. Turn nuts out onto prepared parchment paper, sprinkle with a dash more mulling spice (optional, but if you don’t try it you won’t know what you are missing) and separate warm sticky nuts using 2 forks. Cool completely. Pecans can be prepared way in advance (up to 1 month) and stored in an airtight container.

Serve garnished on a mixed greens salad tossed with sliced pears or tart granny smith apples
